Position Summary:
Trillium is seeking a Culinary Operations Manager to join our team! As the Culinary Operations Manager you will lead operations of each of our Trillium locations to achieve success through creative menu development, a fiscally disciplined mindset, and exemplary leadership values. This is a key leadership position in the company that will report to and work directly with The Director of Food & Beverage, assisting as we move into the next phase of operations and growth within our company. We are seeking an experienced, driven, and well-organized professional whose dedication and initiative will help propel Trillium to achieve its most important goals and lead our culinary teams to success.
Job Duties & Responsibilities
Sales & Profitability
- Accountable for culinary strategies across all Trillium restaurants and taprooms
- Achieve culinary initiatives and menu development with financial responsibility
- Identify market culinary trends to proactively drive improvement and efficiencies
- Design menu while ensuring excellent product quality and brand alignment
- Establish quality and process consistency in planning, forecasting, and budgeting
- Evaluate, and improve processes across culinary operations including cost efficiencies and controls, talent development and succession planning, and revenue generation
- Work with the Director of Food & Beverage for optimal menu mix at each location
Business Development
- Plan and execute successful openings of additional Trillium locations
- Develop and launch a culinary commissary program for utilization across locations
- Identify opportunities with new vendors for centralized sourcing and costing optimization
Leadership
- Inspire a passionate team culture in support of consistent execution of Trillium’s goals
- Drive a culture of continuous improvement & education, and strive for culinary operational excellence by collaborating with cross-functional teams
- Provide guidance and direction to employees including setting professional and personal performance standard and monitoring performance
- Identify appropriate training and/or coaching opportunities and follow-up to ensure effective, legally compliant, and consistent resolutions are reached
- Provide positive, actionable solutions when faced with challenges; ability to lead and influence discussions and encourage two-way communication with the team.
- Oversees Culinary Internship Program
Additional duties may be assigned as necessary.
Desired Qualifications & Abilities
Qualifications & Experience
- Minimum 6+ years of experience in a Executive Chef role within restaurant or entertainment venues
- Experience managing multiple locations preferred
- Experience opening new locations preferred
Knowledge, Skills & Abilities
- Strong capacity to both lead and participate in food and beverage teams to define issues and agree on processes, strategies, and outcomes
- A self-motivated approach, with strong work ethic, requiring limited oversight
- Ability to travel between various Trillium locations throughout New England
